The HI98161 pH meter
One of the most common measures in food products is pH, as it affects many characteristics of food, including flavor, fermentation, texture, appearance and shelf life.
Foods are generally divided into two groups based on their pH value: acidic foods that have a naturally low pH value of 4.6 or lower, and low acid foods that have final pH values above pH 4.6 and a water activity greater than 0.85.
The pH of low acid foods can be adjusted with an acid in order to lower it, thus becoming an acidified food. Maintaining a lower pH value will help prevent unwanted bacteria from growing.
Food products tend to be solid, semi-solid or like a dough with a high fat content.
All three types of specimens during measurement will leave residues on the surface of the glass sensitive membrane and / or clog the reference junction.
FC2023, the electrode supplied with the HI98161, is specifically designed for measuring pH in food. The electrode features a tapered tip for easy penetration, an open junction that prevents clogging and a polyvinylide fluoride (PVDF) plastic body, ideal for use in food and resistant to many chemicals and solvents, including hypochlorite sodium.
It has characteristics such as high abrasion resistance, mechanical strength, resistance to ultraviolet and nuclear radiation. Furthermore, PVDF is also resistant to fungal growth.
FC2023 is a pH electrode designed for use on food and easily connects to the HI98161 pH meter for food with quick-DIN connector, ensuring a safe, watertight and threadless connection.
The HI98161 pH meter equipped with the FC2023 pH electrode is ideal for measuring the pH of foods such as milk, yogurt, meats, cheeses, fruit, sushi, rice, jams, jellies, doughs, ice cream, drinks and fruit juices.
Conical glass tip
The conical tip allows penetration into solid, semi-solid and emulsion samples for direct measurement of pH in food products, including meat, cheese, yogurt and milk.
Open junction
The open junction features a solid viscolene matrix that allows direct contact between the sample and the internal Ag / AgCl reference system. The direct interface not only prevents silver from entering the sample, but also the formation of any occlusions, thus resulting in fast responses and stable measurements.
Body in PVDF
Polyvinylidene fluoride (PVDF) is a type of plastic that is resistant to most chemicals and solvents, including sodium hypochlorite. It has a high mechanical resistance, to abrasion, to ultraviolet and nuclear radiation. Furthermore, PVDF is also resistant to fungal growth.
In addition to being supplied with the food grade pH electrode, the HI98161 is equipped with the Hanna CAL Check ™ feature that alerts the user if any problems occur during calibration. This is very important for the food processing process as it is likely that the probe will be coated with the solids present in the product being analyzed. This coating can easily lead to errors in the pH measurement. By comparing the data of the previous calibration with that of the current calibration, the instrument will inform the user, with indications on the display, when the probe needs to be cleaned, replaced or if the calibration solution could be contaminated. After calibration, the general condition of the probe will be shown on the display as a percentage from 0 to 100% in 10% increments. The state of the probe is affected by the slope and offset values, which can be found in the GLP information.
By pressing the virtual button “AutoHold” in measurement mode, the instrument will automatically lock and record a stable measurement. The “out of calibration range” message, if enabled, will alert the user when the measurement is outside the range of the calibrated pH values.
The logging mode allows the user to save up to 200 samples. Recorded data, along with GLP information, can be viewed at any time or transferred to a PC with the Hanna HI920015 micro USB cable and HI92000 software. GLP information includes date, time, calibration solutions, offset and slope and can be accessed directly by pressing the GLP key.
